Cool Vegan Cashew & Cranberry “Tuna” Salad Wraps with Avocado
Ingredients
- 15 oz can chickpeas
- 1 avocado (peeled, seeded, and cubed)
- Fresh lime juice
- 1/3 cup vegan mayo
- 1/4 cup (or more) cashews
- 2 celery stalks (diced)
- 1/2 small cucumber (diced)
- 1/4 cup purple cabbage (chopped)
- 1/4 cup cilantro (chopped)
- 1/2 cup dried cranberries (or other dried fruit such as raisins)
- 1/2 tsp cumin
- Pinch of salt
- Pepper to taste
- Flour tortillas or other wrap (even lettuce)
Instructions
- Prep the avocado and squeeze lime juice all over it
- Drain and mash the chickpeas with a fork
- Mix everything up in a big bowl
- Season to taste
- Eat with flour tortilla wraps or lettuce cups/ wraps
