Andrew Sealy’s Signature Vegan Pancakes from Ep 8 of New Day New Chef

In “New Day New Chef” Season 1, Episode 8, hosts Jane Velez-Mitchell and actress Katie Sarife, best known for her roles in *Annabelle Comes Home*, *Twisted Sisters*, and *The Conjuring*, bring viewers an exciting plant-based cooking experience.

First, the Spork Foods sisters, Heather Goldberg and Jenny Engel, prepare Fresh Spring Rolls with Glazed Shiitake Mushrooms and a Tangy Peanut Dipping Sauce. Their easy-to-follow instructions make this vibrant dish simple to recreate at home.

Next, yoga master Andrew Sealy joins the show to cook delicious pancakes topped with homemade Blueberry Syrup. Andrew also impresses with a stunning yoga pose, showcasing his flexibility and strength.

Sealy’s Signature Vegan Pancakes

Andrew Sealy’s Signature Vegan Pancakes from Ep 8 of New Day New Chef

Ingredients

  • 1 package Bob’s Red Mill Gluten Free Pancake Mix
  • 1 cup Coconut Milk
  • 1 cup Applesauce
  • 1/2 cup Warm Water
  • 1/2 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/2 tsp Vanilla
  • 1/2 tsp Nutmeg or Turmeric
  • Maple Syrup
  • Fresh Berries or Vegan Chocolate Chips

Instructions

  • Heat skillet or non-stick pan to medium-high heat
  • Lightly grease with coconut oil (You’ll know the perfect heat when few sprinkles of water dance and disappear)
  • Put all ingredients (not including berries or maple syrup) in a large bowl and whisk all ingredients until blended smoothly(Batter should be thick, but without lumps)
  • Make sure mix is completely moistened with a fluid and sticky consistency
  • Spread batter to a 3” round on the pan
  • Let cook until edges are golden brown and bubbles are visible at center of pancake
  • Flip with flat spatula and repeat
  • To make syrup heat fresh berries (preferably blueberries) and maple syrup on stovetop
  • Once warm, pour over pancakes and serve
