Season 2, Episode 3 of “New Day New Chef” delivers another mouth-watering vegan creation from actor turned chef, Courtney Grant. This time, he brings a plant-based twist to a classic comfort food favorite: Chicken and Waffles made with oyster mushrooms for a delicious and cruelty-free start to your day.

A Plant-Based Comfort Classic

Courtney’s Vegan Chicken and Waffles recipe is a cruelty-free twist on the traditional dish, using oyster mushrooms as a flavorful and satisfying substitute for chicken. When battered and fried to golden perfection, these mushrooms become crispy on the outside and tender on the inside, making them the ideal component.

Earlier in the episode, Courtney also showcased his Power-Packed Protein Balls. Vegan Chicken 'n' Waffles

Oyster mushrooms stand in for chicken in this cruelty-version of the classic comfort food.
Course: Breakfast

Ingredients

Chicken (Oyster Mushroom)

  • Oyster Mushrooms washed
  • 2 Cups Flour
  • 1 TBSP Umami
  • 1 TBSP Garlic Powder
  • 1 TBSP Onion Salt
  • 1 TBSP Garlic Salt
  • 1 TBSP Everything But the Bagel Seasoning
  • 1 Cup Scallions
  • Bread Crumbs
  • To make Chick'n
  • Pre-heat 2 cups of oil in a skillet.
  • Add flour and seasonings to bowl and mix together. Add 1 cup of water more if needed to make it the consistency of pancake batter and mix well.
  • Add in your washed oyster mushrooms and stir to cover the mushrooms in the batter.
  • Add breadcrumbs to a separate bowl. Carefully place mushrooms into breadcrumbs and gently mix to cover the mushrooms.
  • Fry in oil for about 5 minutes on each side until browned on all sides.

To make waffles

  • Mix waffle mix and water together in a bowl. Pour into warm waffle maker and cook for a few minutes until golden brown.

To assemble

  • Plate your waffle top with oyster chick'n. Serve with agave or maple syrup.
