Most everyone has heard of Waldorf salad.  It is a popular salad, super delicious and healthy, and today…it is VEGAN!  Today’s featured chef Elizabeth Mansur, shows us how to make this delicious salad.  She is an incredible inspiration, and super young and vibrant at age 70!  Elizabeth is proof that a plant-based diet can help you live a long and healthy life.  Now, let’s check out her awesome salad…

 

 

Who Is This Inspirational Chef?

At 70, Elizabeth is living proof that a whole-food, plant-based lifestyle pays off no matter what age you start!

Her journey as a vegetarian started years ago. She was primed and ready when the whole food plant-based movement took hold during the past decade. What a great time to be alive and well!

Elizabeth loves activities like tennis, yoga, and hikes, which keep her fit and flexible.  Her passion for healthy living led her to explore ideas around whole food plant-based cooking, and she decided to take a vegan cooking course at Rouexbe culinary school in 2017. She believes the heart of the home is the kitchen… and that’s where her Lunch & Learn class was born. She hosted an intimate group of 6-8 guests in her eat-in kitchen.

Along her journey through volunteering, Elizabeth had the honor to learn from the American Cancer Society Gerson Institute and the Chopra Center for Wellbeing. And she studies holistic studied at the school of healing art.

Elizabeth was able to parlay her knowledge and experience into her newfound San Diego vegan community. She created her own following to expand the awareness beyond her immediate community to both veg-curious and the restaurateurs catering to their emerging plant-based demand. One of her proudest accomplishments is repeatedly entering unknown territory by taking her meet-up followers to non-vegan restaurants as a demonstration to the restaurants on how to meet the demand of a growing plant-based society!

Back To The Waldorf Salad!

Vegan Waldorf Salad

Course Main Courses, Side Dishes

Ingredients
  

  • Salad:
  • 1 cup cooked grain of your choice faro was mine
  • 1/4 cup red onion or diced
  • 3 Tablespoons chopped fresh dill
  • 2 apples I used honey crisp
  • 1 cup seedless grapes red or green sliced in half
  • 3 stalks celery diced
  • 1 cup walnuts soaked
  • 1/4 cup raisins or dried cranberries I used cranberries because I hate raisins
  • Salt and pepper to taste
  • 3 Tablespoons parsley or chopped kale
  • Vegan Waldorf Dressing:
  • 1/4 cup cashew mayo
  • 3 Tablespoons apple cider vinegar
  • 2 teaspoons pure maple syrup

Instructions
 

  • Mix well and set aside to settle, it’s time for lunch!!!!
