Oatmeal Breakfast Bowl

Ingredients

  • 1 cup classic oats
  • 2 cups water
  • 1/2 cup frozen blueberries
  • 1/2 cup mango diced
  • 1/2 cup soy milk plus more as needed
  • 1 apple chopped
  • 1 tablespoon maple syrup plus a little extra for topping
  • 2 tablespoons raisins
  • 1/2 teaspoon stevia mixed with non-alcoholic vanilla or to taste
  • 2 strawberries sliced, for topping
  • 1/4 cup fresh blueberries for topping
  • 2 tablespoons chocolate muesli for topping
  • Optional: pinch of cinnamon

Instructions

  • Add oats and water to a small saucepan.
  • Bring to a simmer and cook for about 5 minutes, stirring often, until the oats soften.
  • Stir in frozen blueberries, mango, soy milk, chopped apple, maple syrup, raisins, and stevia vanilla.
  • Continue cooking for 2 to 3 minutes, until the fruit warms through and the oatmeal is creamy.
  • Spoon into bowls.
  • Top with strawberries, fresh blueberries, chocolate muesli, a small drizzle of maple syrup, and cinnamon if using.
  • Serve warm.
