She Makes A Mean Chickpea Salad, But What Else?
Dr. Heleen Roex is a retired pediatrician, educated in the Netherlands (Doctor of Medicine, Cum Laude, University of Utrecht; Medical Specialist, Paediatrician, Free University Amsterdam). She holds a Certificate in Plant-Based Nutrition through eCornell University and has qualified as a Food For Life instructor with the Physicians Committee for Responsible Medicine in Washington DC. She conducts community courses in her hometown of Adelaide in this capacity.
Heleen has co-organized, presented at, and attended numerous Australian, North American, and European plant-based nutrition conferences, symposia, grand rounds, and community events. She co-founded Doctors For Nutrition in 2018 and is chair of the Board of Directors.

Time To Make This Delicious Meal
This tasty Chickpea Salad is smothered in a tangy and flavorful Orange Miso Dressing that will knock your socks off with deliciousness. It can be thrown together in just a few minutes and will fill you up with a ton of nutrients and protein. This is a perfect meal in my opinion, so go ahead and give it a try!

Scrumptious Chickpea Salad with Tangy Orange Miso Dressing
Ingredients
- SALAD:
- 1/2 C dry quinoa
- 1 C water
- 12 cherry tomatoes halved
- 4 Spring onions sliced
- 1 1/2 C salt-free chickpeas cooked, or canned and rinsed
- 3 Tbls fresh coriander
- DRESSING:
- Juice of 1 orange
- 1/4 C rice vinegar
- 2 tsp white or yellow miso
- 1 Tbls maple syrup
- 1 clove garlic minced
- 1 tsp ginger grated
- 2 tsp black sesame seeds
Instructions
- Place 1/2 C quinoa and 1 C water in saucepan and bring to a boil. Reduce to simmer, cover and cook until water is absorbed and quinoa is tender (abt. 15 min). You will know that the quinoa when all the grains from white to transparent, and the spiral-like germ has separated. Wait for it to cool to add to recipe.
- Combine tomatoes, onions, quinoa, chickpeas and fresh coriander in a large bowl.
- Mix all dressing ingredients together in a small bowl. Pour the dressing into the larger bowl and toss all of the salad ingredients around. Serve and enjoy!
