Making This Delicious Lettuce Wrap Recipe
These ultra flavorful, crunchy lettuce wraps are a really fun and different way to get all the good stuff into your meal! It is a very healthy dish, bursting with flavors and nutrients! The recipe below, provided by Tonia, makes about 6 lettuce wraps, but you can easily double the recipe should you need more for a dinner party, or if you simply are feeding a lot of friends and/or family.

Buffalo Cauliflower Rice Lettuce Wraps!
Ingredients
- 1 Can of cannellini beans rinsed and drained
- 3/4 C chopped celery
- 1/2 C chopped onion
- 3 minced cloves of garlic
- 1/2 tsp garlic powder
- 6-8 oz frozen or fresh cauliflower rice
- 1 C vegetable broth or 1tsp Better Than Bullion vegetable broth and 1C water for cooking only this will cook down regardless of what you use
- 1 C brown rice or your favorite grain
- 1 shredded carrot for topping
- 2 chopped scallions for topping
- 1/2 C or more Buffalo sauce (I used about 1/2 to 3/4C total)
- Lettuce leaves-I used Red Leaf romaine you could also used chard!
Instructions
- In a large saucepan cook celery, onion and vegetable broth(or bullion and water mix) until tender. Add in beans, rice, cauliflower rice and buffalo sauce. Cook on medium heat until everything is hot and cauliflower gets a bit softer, approx 5-6 minutes. Let cool for a couple of minutes. Spoon into lettuce leaves and garnish with carrots and scallions. I also topped mine with a dollop of vegan ranch dressing! Enjoy!
