Jenner's Garden Tomato Sauce
Ingredients
- 1/2 medium onion roughly chopped
- 3 medium carrots roughly chopped
- 2-3 celery stalks roughly chopped
- 4-5 garlic cloves peeled
- 4 cups fresh garden tomatoes roughly chopped
- 3 tablespoons olive oil
- Sea salt to taste
Instructions
- Heat olive oil in a large saucepan over medium heat.
- Add chopped onions and a pinch of salt. Cook until onions begin to turn translucent, about 5 minutes.
- Add carrots and celery. Continue cooking until vegetables start to soften, approximately 8-10 minutes.
- Add garlic and cook until fragrant, about 1 minute.
- Add tomatoes and bring to a simmer.
- Cook until all vegetables are very soft, about 25-30 minutes.
- Using an immersion blender, puree until completely smooth.
- Season with additional salt to taste.
Notes
- Toss with your favorite pasta
- Use as pizza sauce
- Serve with crusty bread
- Base for vegetable soup
