RECIPE: Jackfruit Tacos: Everyone’s New Obsession
Use pre-packaged Tex mex jackfruit (or chili lime flavor) from Uptons Naturals or The Jackfruit Company
INGREDIENTS
- Corn tortillas
- Avocado, ripe
- Lettuce of your choice
- Cherry tomatoes
- Shredded vegan cheese
- Salsa (I like super spicy)
DIRECTIONS
- Pre-heat oven to 350
- Place corn tortillas in oven to crisp a bit
- (About 6-10 minutes but watch closely ovens vary)
- Take out and shape into taco form let cool a few minutes to hold the shape.
- Stuff your taco shells with jackfruit
- Avocado, tomatoes, (vegan cheese optional), lettuce, salsa. (Or whatever you want to use as taco fillers!)
Air Fried Zucchini Strips
INGREDIENTS
- slice zucchini into 3 inch strips that are approximately 1/3 inch thick
- very, very lightly spray with oil
- very lightly sprinkle each side with sea salt
DIRECTIONS
- Place the sliced zucchini into an “air fryer” and cook for 20 minutes at 390 deg F
We prepared these zucchini strips as a side dish before the show; thus did not demonstrate how to make these delicious strips.
We used a Toshiba air fryer to fry with virtually no oil
