RECIPE: BadAss Vegan aka John Lewis’ Bad Ass Beautiful Mess

INGREDIENTS

  • quinoa (4-6 servings) (prepare according to package directions)
  • sweet plantains
  • 1 onion, diced (can be used as a garnish or sauteéd)
  • 10 oz guacamole, prepared or homemade
  • 1 jalapeño, diced
  • 1 garlic clove, crushed
  • sea salt, to taste

DIRECTIONS

  1. Cook quinoa on the stove according to package directions
  2. Place sweet plantains, unpeeled, in a 350 degree F oven for 30 min or until tender
  3. Place guacamole, jalapeño and garlic in a blender using the low setting.

HOW TO PLATE

  1. Place the quinoa in a bowl, pressing the center down with a spoon.
  2. Place guacamole into the center of the quinoa
  3. Cut the plantain peel and scoop out the plantains, carefully placing them around the guacamole
  4. Garnish with raw, diced onions and enjoy
