Chicken Free Tortilla Soup

Ingredients

2 Tbsp grapeseed oil

1 bell pepper, diced

1 onion, diced

1 jalapeno, seedless and diced

2 cups of cilantro chopped

2- 20 oz cans of organic young jackfruit, drained, water squeezed out and shredded

2-19 oz cans of Black beans

2-28 oz jars/cans of organic fire roasted tomatoes, diced

6 oz Organic Frozen Sweet Corn

4 cups of organic veggie broth

3 Tbsp garlic powder

3 Tbsp chili powder

2-3 Tbsp sea salt

1 tsp black pepper

2 organic corn tortillas (Homemade is best!) cut in large squares

Directions

Heat up oil in a pot and saute onions, bell pepper and jalapeno until soft. Add all ingredients, except tortillas. Bring to a boil. Lower heat and simmer for about 15 minutes. Add tortillas and use immersion blender to slightly blend the soup, about 1-2 minutes. Serve with slices of avocado or vegan sour cream. Enjoy!
