Taro Baked Fries
5 Taro roots
1 tsp Turmeric
1 tsp ground Coriander
¼ tsp ground Cumin
1 Tbs Coconut Oil
½ tsp Salt
Preheat the oven to 400’ F
Peel and chop the Taro into french fries-size slices.
Place the taro, spices and oil in a baking dish and toss well.
Bake, stirring occasionally until the taro is crispy.

Cilantro Chutney
1 bunch Cilantro
2 Tbs Lime Juice
1 Dates, pitted and chopped
1 tbs Ginger root
1 tsp Salt
2 tbs shredded coconut
1/4 cup Water
Place all ingredients in blender, and blend until smooth.
The consistency of this chutney should be that of a thick puree.

Red Lentils & Beet Stew
1 Cup Organic Red lentils
1 Tbs Olive Oil
1 tsp Himalayan Salt
4 Cups Water
1 tsp Turmeric
1 tbs Coriander powder
1 Tbs Dried Oregano, thyme, basil or your favorite herb (optional)
1/2 Cup Carrots, diced small
½ Cup Beets, peeled and diced small
½ tsp Black pepper
Parsley, cilantro or basil for garnish
Lime wedges
