Sweet Potato Perfection with Setareh Khatibi!

VeganNation’s CEO, Isaac Thomas,  is today’s taste tester! “Setareh is most recognized for starring on Univision’s beauty pageant reality show “Nuestra Belleza Latina ‘ where her comedy lip sync battle “EI Pollito Pio” reached over 20 million views on social media.”

Jane and Setareh are all about the potatoes today!

Tis the season for sweet potatoes so you can go out and get lots of different varieties of sweet potatoes. Throw them in the air fryer for 15 minutes, and you have a healthy snack that is oil-free! Setareh says people need to know about the “power of the papas.” Papas are potatoes in Spanish. She explains that potatoes don’t make you fat. It’s all the animal products a person might put on potatoes like the butter, sour cream, bacon, and cheese that makes them unhealthy.

Potatoes saved her mom’s life! Her mom had a heart attack and she was told that she needed open heart surgery. She veered against that treatment and decided to attend Dr. McDougall’s 10-Day Live-in Program. She and her mom went together and they ate a low-fat plant-based diet. Now her mom is better. Setareh has also benefitted from her vegan lifestyle for the past 6 years. Her ovarian cysts and acne have disappeared, and she has never felt better!

Setareh advocates for a plant-based diet because it is the diet that made her feel well. Previously, she tried the keto and paleo diets, and she didn’t feel well. As soon as she tried a plant based diet, she felt better each day. Now she is helping others through her social media platforms and a membership program to help people transition to plant-based diets. Setareh also recommends buying wholesale fruits and vegetables to cut back on the cost of groceries.

These potatoes could not be more simple with the air fryer. You chop up the potatoes in equal parts and sprinkle on some cinnamon and pop them in the air fryer, and you’re done. A simple delicious snack for anyone to enjoy! Jane is enjoying them so much she does a sweet potato dance to celebrate!
