Superwoman Bowl with Cashew Cream Sauce
Ingredients
Superwoman Bowl
- Quinoa (cooked)
- Lacinato Kale
- Avocado
- Butternut Squash (cubed)
- Caramelized Onions
- Roasted Corn
- Hemp Seeds
Cashew Cream Sauce
- 1 cup cashews (soaked)
- 1/2 cup filtered water
- 1 lemon juiced
- 2 tsp apple cider vinegar
- 1 tbsp olive oil
- 1 pinch sea salt
Instructions
For the Bowl
- Massage kale with lemon juice and salt
- Layer all bowl ingredients from bottom up (starting with quinoa)Set aside, and make sauce
Cashew Cream Sauce
- Mix cashews, filtered water, lemon juice, and apple cider vinegar in blender
- Drizzle cashew cream sauce on top of bowl
- Top with hemp seeds
