Vegan mushroom tacos with roasted sweet corn, red pepper, and fresh guacamole on this episode of #LunchBreakLIVE. Mushroom Taco Tuesday (Or any day)!
Why are Tuesdays the day for tacos? Everyday is taco day in my opinion! And these incredible mushroom tacos are going on my list of the best tacos to make at home. The mushrooms, sweet corn, red peppers, and guacamole make these tacos super tasty and oh so healthy. There is the perfect amount of flavor in every bite with the assortment of roasted vegetables. Of course, I will add a ton of hot sauce to my tacos….to each their own right! Tacos are a great meal because they are simple to make, most everybody loves them, and they are suitable for lunch, or dinner! Adults and kids love tacos, so they are an all-around favorite for many families. I hope you will try to make these at home, as I am providing the recipe below. Roasted Mushroom Sweet Corn Bell Pepper Tacos
- 1 Corn Tortilla
- 1/2 cup white mushrooms
- 1/2 bell pepper
- 1 ear sweet corn
- For The Guacamole:
- 1 avocado
- 1 lime
- 1/4 cup cilantro
- 1/4 sweet onion
- 1 small jalapeño
- Pinch of sea salt
- Add veggies to the oven to roast for 20 minutes at 350 degrees. Add tortillas to the hot pan for 2-3 minutes until warm. Add chopped avocado, cilantro, sweet onion, jalapeño, lime juice, and sea salt to a bowl and mash with a fork. Add roasted veggies to warm tortilla and top with fresh guacamole.
