When asked to share a little bit about herself, here is what Elizabeth had to say:
“At 70, I am living proof that following a healthy, whole-food, plant-based lifestyle pays off, no matter what age you start!
My journey as a vegetarian started years ago, I was primed and ready when the whole-food plant-based movement took hold during the past decade. What a great time to be alive and well!
My activities keep me fit and flexible with tennis, yoga, and hikes in San Diego’s many trails.
My passion for healthy living brought me to explore ideas around whole Food plant-based cooking, I decided to take up vegan cooking courses at Rouexbe culinary school in 2017. I believe the heart of the home is the kitchen and that’s where my Lunch & Learn class was born. I hosted an intimate group of 6-8 guests in my eat-in kitchen.
Along my journey through volunteering, I had the honor to learn from the American Cancer Society Gerson Institute and the Chopra Center for Wellbeing. Included in my holistic studies at the school of healing art, I was able to parlay my knowledge and experience into my newfound San Diego Vegan community. I created my own following to expand awareness beyond our immediate community to both veg-curious and the restaurateurs catering to their emerging plant-based demand. One of my proudest accomplishments is repeatedly entering unknown territory by taking my meet-up followers to nonvegan restaurants as a demonstration of how to meet the demand of a growing plant-based society!
I hope with my demo today, I am able to inspire viewers to adopt a plant-based whole food diet with no sugar, oil, or salt! “
