A Bit About Susan Pratt
Susan lives in beautiful North Vancouver, BC, Canada, with her husband, Randy, and 4-year-old daughter, Carrington. Being in nature makes her feel at peace and centered. You can usually find Susan in the woods behind her house foraging for wild edibles or gardening and feeding the birds in her backyard.
Born and raised in beautiful British Columbia Susan grew up with a forest for a playground. Although she was active, unfortunately, her family ate the Standard American Diet, which was high in sugar and fat with very little variety or nutrition. Because of this, she became overweight by the time she was in Elementary School. For Susan, this was an extremely tough time in her life. However, it became the catalyst for her love of cooking nutritious food and understanding what her body needs to thrive.
Susan is a vegan blogger, but previously she was an entrepreneur and Special Needs Educator. Working in schools and with children gave Susan first-hand experience with the effects of diet and nutrition on children’s behavior and energy levels. This was one of the many reasons she became passionate about feeding her family healthy, nutritious meals.
For Susan, the decision to go vegan was an easy one. She and her husband watched some compelling documentaries on veganism and learned of the adverse effects that animal products have on our bodies and the abilities that plants have to reverse disease. Together through a plant-based lifestyle, they healed their bodies. In fact, Susan’s husband narrowly missed having a heart attack. His doctor said if he hadn’t started eating a vegan diet when he did, there would have been dire consequences.
What’s Up With This Vegan Cheese Sauce?
Rich, creamy and cheesy… this is the best vegan cheese sauce by far! Cheese sauces make for a great dip, eaten hot with chips or veggies, baked potatoes, and more. You and your guests or family will be surprised that this sauce is actually super healthy, made from vegetables and not dairy! Say whatttttttttt???
Some say it is a rule to never blend potatoes because it will give you a glue-like texture. However, with Susan’s recipe, this rule is being broken! Blending the potatoes is what gives this sauce its cheese-like texture.
This vegan nacho cheese sauce is so versatile, and it keeps well in the fridge. It is a sauce you won’t feel guilty about giving to your kids because it is made with wholesome potatoes, carrots, and nutritional yeast. Nothing bad for you at all. Eat it on pasta, vegetables, nachos, tacos, dips, or anything else you would normally put cheese on. You can even use it to make a grilled cheese sandwich your kids will LOVE.
Vegan Nacho Cheese Sauce
Ingredients
- 1/2 cup raw cashews soaked
- 3 cups diced peeled potatoes
- 2 cups diced carrots
- 1/3 cup nutritional yeast
- 3 tbsp neutral-tasting oil grape, sunflower, olive
- 2 tbsp fresh lemon juice
- 2 tsp white wine vinegar
- 2 cloves garlic
- 1 tsp sea salt
- ½ tsp smoked paprika
- 3 tbsp water
Instructions
- Soak the cashews in hot/boiling water for at least an hour or overnight.
- Fill a large pot with 2 inches of water and bring to a boil over medium heat. Arrange the carrots and potatoes in a metal steamer basket; place in the pot and cover. Steam the vegetables until fork-tender, 10-15 minutes.
- Place all the ingredients in a high-speed blender or Vitamix.
- Blend until smooth. Scrape down the sides if needed and re-blend.
- Taste and add more salt or water if needed.
- Will keep in an airtight container in a fridge for up to a week.
