Alex Tip Tempts Our Tastebuds with His Vegan Thai Dishes!

Alex Tiphayachan is a life coach and the host of his own cooking show and wellness channel on YouTube and Facebook called The Spiritual Vegan. He has been working for five years coaching low-income families and inner city youths. His channel covers topics on diversity, vegan cooking, and LGBTQ rights. He draws his inspiration from all things wellness. This includes, physical, emotional, and spiritual wellness, which help his viewers get the fullest experience out of their lives!
On the show he starts off by Alex showing us his beautiful blue flower tea, which is a traditional Thai tea from a blue flower plants. It has high amount antioxidants which gives it cancer-fighting properties, and it helps boost the immune system. Add lemon to make it turn a royal purple color.
Next Alex moves onto making his Thai lettuce wraps using tempeh, fried in avocado oil, salt and pepper, instead of soy protein. The dish is packed with colorful nutrient-rich vegetables. The sauce was very simple to make with the almond butter as a base. Easy, simple, and beautiful dish to make for all your family and friends. Poor Patrizia looks like she wants to jump to the other side of the screen to try it!
If that wasn’t enough, Alex also prepares Thai yellow curry noodles. He sautés a variety of veggies, adding yellow curry powder to intensify the flavor of the vegetables. and he uses coconut milk for the curry base. He also uses turmeric and suggests using black pepper with it because it increases the curcumins bioavailability, and it also increases the antioxidant value. Menu:
Thai lettuce wraps with pan seared tempeh and Thai style almond butter dressing:
5 leaves of Romaine lettuce
2 bell peppers one yellow and one red
1 package tempeh
salt and pepper to taste
Thai almond butter dressing
3 tablespoons almond butter
3 tablespoons veggie broth
1 tablespoon sugar
1 tablespoon rice wine vinegar
1 tablespoon siracha
salt and pepper to taste 1 tsp. each
Thai yellow curry noodles:
one package gluten free linguini noodles
half of a bell pepper both yellow and red sliced
half a large zucchini sliced
half a cup mushrooms sliced
Sauce
1 can coconut milk
1 tablespoon cornstarch diluted in 1 tablespoon water
1 1/2Â tablespoon of curry powder to the curry sauce
