Ex-NFL Football veteran, a lineman for Dallas Cowboys and Arizona Cardinals’, David Carter, known as The 300 Pound Vegan, tackles the truth about veganism with cashew queso dip on #OneVeggieAtATime with Antoinette Westcott. David loves to cook and one of his favorite cookbooks is “Oh She Glows” by Angela Liddon. Watch as he teaches Antoinette how to make his favorite “bomb vegan” dip step-by-step.
Everybody loves queso and it’s even tastier when it didn’t come from an animal’s breast.
David has been vegan for about seven years and he absolutely loves it! He says the best part is being able to eat whatever he wants. He says it really helps knowing how to eat especially as an athlete. He says some athletes are trying to gain weight for their player positions but they don’t know how to do it in a healthy way. David explains that heart disease and other conditions correlated to poor dietary choices and the consumption of animal fats are common amongst large-sized athletes. Believe it or not, David was over 300 pounds before transitioning to veganism. You can see that his choice to leave animal products out of his diet has transformed his physique!
In just a few minutes and you can be eating this delicious nutritious snack!

David shows us the super simple plant-based ingredients he uses to make his delicious queso dip. David adds the ingredients into the blender with Antoinette’s help. David says he wanted to be a chef when he was growing up, while he shows us his easy technique to peel garlic quickly with a chopping knife. He also adds jalapenos for spice. After adding the dip ingredients to the blender, David and Antoinette blend the dip until it is smooth. Add more spices or jalapenos for more heat and there you go an easy delicious “bomb vegan snack” to share with others if you want or eat it all yourself! You can put it on rice and beans or nachos too.  David has also added to pasta dishes. This cheese is versatile! Try making this bomb dip at home!
