Better Than Tuna Salad
- 1 can garbanzo beans – drained and rinsed
- ¼ cup red onions – chopped
- ¼ cup celery – chopped
- ¼ cup red bell pepper - chopped
- 1 tablespoon capers
- 1 tablespoon dill – chopped
- 1 tablespoon vegan mayo
- 1 tablespoon mustard
- salt and pepper to taste
- Pulse the garbanzo beans in your food processor or mash with the back of a fork. Set aside.
- In a large bowl add the mayo, mustard, pickles, onions, celery, capers, red bell pepper, dill, and salt and pepper
- Add the garbanzo beans to the mayo mixture and mix well.
- To your bread, spread Dijon mustard and avocado slices (slightly smashed and seasoned with salt and pepper)
- Scoop a generous serving of mixture onto the bread.
- Top with sliced tomato and romaine lettuce.
