Avocado toast is super popular these days. But this avocado toast tops the norm with the addition of smoked tempeh. Oh yum, that sounds so delicious. And avocados are a super healthy food, while tempeh is full of protein, so this is an all-around awesome meal. And then we have the simple, yet delicious tofu scramble with cheese. An all-time favorite for vegans everywhere. I am providing both recipes below so you can have these easy vegan meals at your fingertips. - extra firm or firm tofu - cut in cubes
- 1 C of broccoli- cut into bite sizes
- 1 C of Violife mozzarella
- trader joes chickenless seasoning
- Sauté broccoli in a pan with water
- Add tofu cubes
- Sprinkle Trader Joe’s Chickenless seasoning
- Sprinkle with plant-based cheese
- Let the cheese melt
Tempeh Avocado Toast
- 1 package of Litelife smoky tempeh cut pieces in 1/2
- 1 Avocado
- 2 slices of Ezekiel bread
- 1/2 C sprouts
- 2 Tsp Plant-based Miso Spread
- Toast the bread
- Brown the tempeh in a slightly oiled pan until crisp
- Spread avocado onto toast
- Add tempeh pieces, sprouts and top with miso spread
