As a vegan foodie with limited vegan options in her small city, which is home to many cattle ranchers, she is determined to teach others that eating vegan is simple and achievable no matter where you live. Kimberly is a homeschooling mom of an 8-year-old vegan daughter, a recipe developer, and a food photographer who also enjoys walks, reading, and sewing in her spare time.

Cauliflower and tofu are the celebrities in this recipe, with a ton of veggie co-stars! Serve this popular dish on tostadas, or use chips to dip. Every bite gives you a punch of flavor and texture you will love. This dish has cucumbers, onions, avocados, jalapeno, cilantro, fresh lime, and of course tofu and cauliflower. Major flavors are packed in this simple and fun recipe. Perfect for a gathering or dinner party with friends.

Vegan Ceviche with Tofu and Cauliflower
Ingredients
- 2 roma tomatoes diced
- 1 cup red onion chopped
- 1 bunch of cilantro chopped
- 1 cucumber diced
- 2 cups cauliflower finely chopped
- 1 block of firm tofu pressed and cubed
- 1 jalapeno seeded and chopped
- 1 tbsp olive oil
- juice of 2 limes
- 2 avocados peeled and diced
- salt and pepper
Instructions
- In a large bowl, combine all the ingredients except for the avocados, salt and pepper. Mix well.
- Add the avocados, season with salt and pepper, toss gently.
- If possible, chill for at least 1 hour before serving.
- Serve on tostadas, with tortillas chips or saltine crackers.
