Oatmeal Breakfast Bowl
Ingredients
- 1 cup classic oats
- 2 cups water
- 1/2 cup frozen blueberries
- 1/2 cup mango diced
- 1/2 cup soy milk plus more as needed
- 1 apple chopped
- 1 tablespoon maple syrup plus a little extra for topping
- 2 tablespoons raisins
- 1/2 teaspoon stevia mixed with non-alcoholic vanilla or to taste
- 2 strawberries sliced, for topping
- 1/4 cup fresh blueberries for topping
- 2 tablespoons chocolate muesli for topping
- Optional: pinch of cinnamon
Instructions
- Add oats and water to a small saucepan.
- Bring to a simmer and cook for about 5 minutes, stirring often, until the oats soften.
- Stir in frozen blueberries, mango, soy milk, chopped apple, maple syrup, raisins, and stevia vanilla.
- Continue cooking for 2 to 3 minutes, until the fruit warms through and the oatmeal is creamy.
- Spoon into bowls.
- Top with strawberries, fresh blueberries, chocolate muesli, a small drizzle of maple syrup, and cinnamon if using.
- Serve warm.
