Oodles of Zoodles with The Clean Eating Chick!

Grab a spiralizer and zucchini and you are almost done making this dish already! This recipe is “simple, easy, and nutritious.” According to the The Clean Eating Chick zucchini can help prevent cancer. Eleni’s mother passed away from cancer and she felt her mom wasn’t shown proper nutrition by her doctors. The level of misinformation out there inspired The Clean Eating Chick to help inform others and show them what to eat for overall health!
To top it Eleni says zucchini is great for your skin because it has a high water content. If you’re wondering how The Clean Eating Chick I knows so much about nutrition and diet she actually studied at the Institute of Integrated Nutrition, which is an online school for holistic health. The Clean Eating Chick explains that avocados are great for your hair, skin, and nails. She also shares that pink salt is better than white salt because it aids in detoxification. Eleni sure has a plethora of knowledge!
The zoodles look delicious and they get the “omg fantastic” seal of approval from Jane! She liked it so much she ate her whole plate before That Snarky Vegan Girl could get a bite! Avocado Pesto over Zoodles Recipe
Ingredients:
(Serves 2)
-1 medium organic zucchini
-1 ripe avocado
-2 cloves garlic
-1/2 lemon for juice
-1/4 cup organic basil
-2 tablespoons of extra virgin olive oil
-sprinkle of crushed red pepper
-pink salt + pepper to taste
Directions:
1. With spiralizer, spiralize zucchini into zoodles
2. In a medium pan, heat 1 tablespoon of olive oil and crushed garlic on low heat and sauté zoodles into pan for 3-4 minutes (be careful not to overcook)
3. Scoop avocado, garlic, basil, olive oil, lemon juice, pink salt, pepper and crushed red pepper into food processor and grind for 1-2 minutes until well combined
4. Plate and enjoy!
