Vegan Coconut Balls For Energy!

Sandra Sellani co-author of the award-winning 40-Year-Old Vegan Cookbook makes Earth Balance Lemon Coconut Energy Balls today on LunchbreakLIVE! Sandra found this recipe on the Earth Balance website. It’s wonderful to see recipes like this one offered by larger plant-based companies. Check out Sandra as she shows us how to rev up our energy with this recipe!

Prepare for blast off with this snack!

Sandra explains that this is the perfect snack for in between meals. If you’re looking for a late afternoon pick-me-up this is the snack for you! Sandra starts the recipe with shredded coconut. Then she adds rolled oats and hemp seeds. Hemp seeds also known as hemp hearts have 10 grams of protein per serving, so they are packed with plant-based protein.  They also have a delicious nutty flavor. Sandra uses chia seeds as a superfood plant-based binder to form the ball shape. She even adds turmeric, which is wonderful for fighting inflammation and disease.  There no question why these balls will energize you with beneficial ingredients in this recipe. Try making your own coconut energy balls at home with the recipe below!

Sandra shares her cookbook recipes at California Vegetarian Festival.
