Who doesn’t love a good vegan Enchilada? If you raised your hand, I simply don’t understand. Ha ha. Mexican food is the best, and Enchiladas are on the top of my list for deliciousness! I am so stoked I now have a recipe for a vegan version of this delightful dish! Cheesy and yummy, drenched in green sauce and all wrapped up in a tortilla. Oh Yeah!
It’s Vegan Enchiladas…Recipe Time!
Below is the recipe for these tasty vegan enchiladas. I don’t know about you, but I am DEFINITELY going to make these at home. I am a sucker for anything drenched in Verde sauce and vegan cheese! This doesn’t look like a super difficult recipe, so I should be ok. Ha ha. I hope you will give it a try too, and please comment and let us know how you liked it!
For the Sauce, The Delicious Salsita Verde:
• 3 Serrano Peppers
• 2 Jalapeno Peppers
• 2 Poblano Peppers
• 1 Big Bunch of Cilantro
• 1/2 Onion
• 10 Large Garlic Cloves ( Large )
• 1 Cup or So (as needed) of tomatillo water
• Vegan Chicken Bullion
Also Going to Need:
• Neutral Frying Oil
(don’t use coconut or flavored oils)
•Vegan Queso Fresco

•Jackfruit (Link on How to Prepare Jackfruit)
• Chopped Cilantro
• Purple Onion
• Vegan Mexican Cream
• Queso Fresco
