Vegan Ground Beef Crumble…Let’s Get Cooking!
I love a quick recipe. Make it easy, or I won’t be cooking it. So this is another perfect recipe for me. And I love most of the alternative vegan ground beef available, as well as the vegan “chick’n” that is pretty much sold everywhere now. So I am sure I will love this tasty dish. Veganism has come so far, and the food choices are now really delicious. So in my opinion, there is no excuse to not at least give veganism a try.

I know I am! Below is the recipe for this Beefless Zucchini Crumble. It doesn’t get much easier than this recipe, so there is no excuse to not give it a try. It’s packed full of nutrients and protein, and vegan cheese! Cheese makes everything delicious!
Vegan Ground Beef Zucchini Crumble
- 1 1/4 C chopped green pepper
- 2 C beefless ground meat substitute of your choice
- 2 C rice or whole grain of your choice
- 4 C cut up zucchini
- 3 C cut up ripe tomatoes
- 1 1/2 T minced garlic or fresh if you're fancy!
- 1 1/2 T minced onion or fresh!
- 1 1/2 C water for cooking
- Cook green pepper with water, minced onion, and garlic.
- Add in the beefless ground and zucchini until the zucchini is nearly finished cooking.
- Add in the cooked rice and tomatoes and cook until the tomatoes soften a little.
- Top with your favorite brand of vegan cheddar cheese and cover until it melts.
- Serve and stuff in your face! Delicious and (mostly) healthy! 🙂
Add that as you're cooking the green peppers and spices.
Add the beefless ground when rice is nearly done.
