She rescues and rehabilitates chickens through her micro-sanctuary Om Tweet Om. Melanie is also the organizer for San Diego Animal Save.

PANCAKE IN A MUG. IT’S ALL KINDA DELICIOUS!
This is a breakfast or snack recipe that is great for when you are in a big hurry and don’t have a lot of time to cook. It only takes 2-3 minutes in the microwave to cook this treat, and just a few minutes to mix the ingredients together. It is also nice and sweet since a ripe banana is mushed into the ingredients. Just Egg is used as the binder for this pancake in a mug. I am telling you this recipe couldn’t be any easier so give it a try! It’s a fluffy and scrumptious dish! Who wouldn’t want to eat a pancake out of a mug?

Banana Pancake In A Mug
Ingredients
- 1 very ripe banana mashed
- ¼ cup JUST Egg
- ¼ cup flour
- ¼ tsp. baking powder
- 1 tsp. maple syrup
- ¼ tsp. vanilla extract
- Garnish with chocolate chips & sliced banana or other fruit!
Instructions
- Mash the banana in a large mug. Add the JUST Egg, flour, baking powder, maple syrup and vanilla. Mix thoroughly. Microwave for 2-5 minutes, or until the middle is fluffy and batter cooked through. Garnish with chocolate chips and sliced banana. Enjoy!
