A PROTEIN-PACKED COUSCOUS SALAD RECIPE FULL OF YUM!

5-STEP Couscous Salad recipe FULL OF PROTEIN.  This salad is  a blend of seasonings, agave syrup, beans, and chopped veggies.  Sounds super tasty and healthy!  Today on #LunchBreakLIVE we have our social activist guest Chef, Christopher Soul Eubanks who will show us how to throw this simple meal or side dish together in a flash!  It is sure to become one of your go-to meals.

After learning the horrors of animal exploitation, Christopher became vegan, began doing community organizing, and has helped co-organize Atlanta’s first-ever animal rights march. SO WHAT GOES INTO THIS COUSCOUS SALAD RECIPE ANYWAY?

This Couscous Salad recipe is packed with protein and fiber, especially with the added chickpeas which are super high in protein and fiber!  So this dish will keep you full for a while.  It also has colorful bell pepper variations, corn, onions, and of course fluffy couscous!  He adds a bit of agave to give it some sweetness as well.  This is a simple dish to throw together, taking very little time at all.

Couscous Salad

This is couscous with a blend of seasonings, agave syrup, beans and chopped veggies. 
Course: Lunch, Side Dishes
Cuisine: American

Ingredients

  • 1 1/2 cups water
  • One 6 oz box of couscous
  • One green bell pepper
  • One red bell pepper
  • One Orange bell pepper
  • Agave
  • onion
  • 1 can of peas
  • 1 can of chickpeas
  • 1 can of corn
  • seasonings as desired

Instructions

  • Step 1: Chop bell peppers and onions
  • Step 2: Mix bell peppers and onions with peas, corn and chickpeas
  • Step 3: Boil water and add couscous to water for approx 3 minutes or until couscous is dry but fluffy
  • Step 4: Add couscous in bowl with peppers, onions, peas, corn and chickpeas
  • Step 5: Add agave and seasonings as desired
