Don’t fret, the taste is off the charts delicious, and you wouldn’t even know the difference between dairy cheese sauce and this vegan sauce. Aspiring herbalist and “plant geek”, Anaya Harry is 18 years old and still considers herself to be growing and learning on her vegan journey. Two years ago she went vegan solely for her health when she was experiencing some health issues. After going vegan for a few days, her condition went away. She then realized that most of her food choices were linked to all of her uncomfortable health experiences. Soon after, Anaya was asked to join Youth Climate Save with Sophia to encourage the youth to make healthier and more sustainable decisions. Anaya wants to major in plant biology and minor in health and wellness to one day encourage people to make better decisions with their food choices. Not only for their health but for the planet as well.
Sophia Hatamleh is an 18 years old senior in high school. She made the decision to go vegan at 13 years old- initially as a bet but fell in love with all the beautiful aspects that veganism has to offer her, the earth, and the animals. Throughout the years, Sophia has educated herself on the positive impact that veganism offers the world, which is why she decided to organize Youth Climate Save Houston. On this platform, informative videos are posted on the link between animal agriculture and climate change. She believes that together, we can save our earth and its beautiful creatures.
Vegan Nachos Dripping In Cheese Sauce
This vegan version of classic nachos will be loved by family and friends alike! It is definitely a recipe that will leave you in disbelief that it is made entirely of plants! You can’t tell the difference. The nacho cheese is made using a base of carrots and potatoes combined with a few other ingredients that give it that cheesy flavor and color. The tortilla chips are very simple to make, just cut and bake! Top them off with some beans, and add vegan meat if you choose, then throw some guacamole on there, and pour over your fresh, creamy, nacho cheese. Heaven awaits with every bite! It’s that simple.
Vegan Classic Nachos
- nacho cheese sauce:
- 1 cup cubed and cooked potatoes
- 1/2 cup cubed and cooked carrots
- 1/4 cup olive oil
- 1/4 cup non-dairy milk
- 2 tsp lemon juice
- 6 jalepeño slices + brine
- 1 1/2 tsp arrowroot powder
- 1/2 tsp turmeric powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 1/2 tbsp nutritional yeast
- 1 Cup of vegan refried black beans
- For the Cheese Sauce:
- Boil the potato and carrots until soft/cooked.
- Add drained and cooked potatoes and carrots to a blender.
- Add the rest of the ingredients for the sauce to the blender.
- Blend until smooth and creamy.
- For the Chips and To Combine:
- Cut the tortillas into triangles. Add retired beans on top. Bake them in oven on greased cookie sheet for 15 mins at 350 degrees.
- Remove from oven and add cheese sauce and top with guacamole and peppers.

Nachos are timeless. They will forever be a staple favorite food for many. I mean who doesn’t love chips drenched in cheese sauce? You just can’t go wrong. So this recipe for classic vegan nachos is awesome because the cheese mimics perfectly that ooey-gooey creamy sauce you want on your nachos.
