RECIPE: The Simplest Lebanese Inspired Okra
INGREDIENTS
- 16 oz bag of okra frozen
- I large onion, chopped into large pieces
- 3 – 5 cloves garlic, thinly sliced
- 10 oz cherry tomatoes, halved
- 1 large lemon, juiced
- 1 Tbsp cumin
- 1 Tbsp olive oil
- 3 – 4 Tbsp fresh cilantro, chopped for garnish
DIRECTIONS
- Sauté okra in a hot pan with 2 Tbsp olive oil until slightly browned
- In a 2nd pan, sauté chopped onion until translucent
- Add sliced garlic to the onion and continue sautéing until tender
- Add the sautéed okra to the 2nd pan
- Add cherry tomatoes to the 2nd pan
- Add the cumin and continue sautéing until the tomatoes become tender
- Turn off the heat and add the lemon juice
- Serve over rice and garnish with fresh cilantro
