RECIPE: Lori Alan’s Spectacular SpongeBob Salad & Sandwich

INGREDIENTS

• Three bags of organic triple washed greens
  • arugula
  • spinach
  • romaine
• 1/4 c ground cashews
• 2 Tbsp ground flax seeds
• 1/2 c pomegranate seeds
• 1 c organic red seedless grapes, halved
• 1 c organic cherry tomatoes, halved
• 1 c cauliflower, riced (chopped into rice-sized pieces)
• 3 Belgium endives, sliced

Dressing

INGREDIENTS

• • 1/3 cup white wine vinegar
  • 1 large lemon, juiced
  • salt & fresh ground pepper to taste

DIRECTIONS

1. Whisk ingredients for salad dressing together
2. Toss salad with dressing immediately prior to serving

Lori’s Amazing Open Face Avocado Sandwich (Gluten-free)

INGREDIENTS

• Gluten-free bread
• black bean hummus
• oil free hummus, Majestic
• lettuce, green leaf
• tomato, sliced
• cucumber, thinly sliced
• 1 avocado, chopped into 1/2 inch cubes
• salt & pepper to taste
• tiny drizzle of extra virgin olive oil (optional)

DIRECTIONS

1. Layer the ingredients in the order above on to gluten-free bread
2. Enjoy
