RECIPE: Youth Empowered Action (Yea) Camp Lunch
Vegan Deli-Style Sandwich (serves one)
INGREDIENTS
- whole grain bread
- 1 Tbsp vegan mayo (Hampton Creek “Just Mayo”
- 1 slice vegan cheese (Violife “just like Provolone with hot peppers”)
- 2 green lettuce leaves
- 4 – 5 organic cucumber slices (thinly sliced)
- 2 tomato slices (thinly sliced)
DIRECTIONS
- Assemble the sandwich with ingredients above as desired
Additional side dishes:
- steamed and cubed sweet potatoes
- fruit salad (using cut up colorful fresh fruit, as available)
- green salad with chopped broccoli, yellow peppers and tomatoes
- hummus
