Trio of Animal Activists Make Soup with an Unusual Audience

Nickie’s Potato Mushroom Soup


  • 10 medium russet potatoes
  • 2 medium white onions
  • 2 cloves of garlic
  • 4 cups sliced mushrooms
  • 2 cups soy or almond milk
  • 1/2 cup white wine
  • 1 tbsp vegan chicken bouillon
  • 1 tsp black pepper
  • 2 green onion or chives minced


  1. Peel and cube potatoes into one inch cubes.
  2. Rough cut both onions.
  3. Slice mushrooms
  4. Boil potato cubes until al denté (about 20 minutes) and set aside.
  5. Add diced onion, whole garlic cloves, and a pinch of black pepper to a a small amount of oil and caramelize over medium heat, stirring often.
  6. Remove from pan and set aside.
  7. Brown mushrooms in pan with a small amount of vegan butter and a pinch of black pepper and set aside.
  8. Place 1 cup of the cooked potatoes 1 cup of soy milk and the caramelized onions and garlic in a high speed blender such as a Vita Mix.
  9. Blend until creamy (about 1 minute) and add the blended mixture back into the soup pot with the remaining cubed potatoes, soy milk, vegan chicken bouillon, wine, and the browned mushrooms.
  10. Season to taste with salt and pepper and simmer on low for 30 minutes.
  11. Serve in a sourdough bread bowl and top with minced green onions or chives.
