Eat Dessert Like a Vegan Model!!!

Today, #LunchBreakLIVE features two Plant-Powered Fashion Models: Mary Kolende & Rachel Ford, making marvelous mini chocolate banana muffins, 100% vegan and delicious! Join the party!
Wow these ladies made one very healthy dessert complete with bananas, superfood cocao powder, and Himalayan salt which is full of minerals. I had never heard of spelt ancient grain flour before this show! The best part of this dessert is that it is vegan, using bananas to replace eggs as a binder. You can also use applesauce and make marvelous chocolate (cacao) breads instead!
The ladies share their vegan journey stories with us. Rachel transitioned to a vegan diet after watching the documentary “Food Inc.” The documentary changed the whole way she thought about eating. Mary saw cows being loaded on a truck headed for slaughter when she was a young girl and decided that it was not ok and she stopped eating meat after getting permission from her mother on the spot!
These ladies are not just beautiful, they are also advocates for the animals, and they are talented! These ladies participated in the Fair Trade Fashion Show which promotes sustainable and cruelty-free fashion. They are trying to get the word out there that you don’t have to wear cruelty or eat it to live well. Mary even attended the fur ban hearing recently in Los Angeles, in hopes to help end the sale of fur in this city and everywhere one day! She is also is illustrating for a children’s book, and she created a YouTube channel to spread awareness. Rachel recently directed and modeled in an all sustainable, all vegan, photoshoot for the Maven Women company. These ladies are definitely using their beauty, brains, and talents to make ethical changes for the animals and the planet. Marvelous Mini Chocolate Banana Muffins
• 1 1/4 cup Spelt Flour
> • 1/2 cup Cacao Powder
> • 1 tsp Baking Soda
> • 1/2 tsp Aluminum Free Baking Powder
> • 1/2 tsp Pink Himalayan Salt
> • 1/2 cup Coconut Sugar
> • 1/3 cup melted Coconut Oil
> • 2 very ripe Bananas
> • 1 tsp Vanilla Extract
> • 1 tsp Apple Cider Vinegar
> • 1/2 cup Water
>
> 1. Preheat Oven to 350°
> 2. Grease muffin tins with a thin layer of coconut oil
> 3. Place dry ingredients into a bowl and whisk together
> 4. Place bananas in a separate bowl, and mash with a fork.
> 5. Add coconut oil, vanilla extract, coconut sugar,
> apple cider vinegar, and water to bananas. Stir well.
> 6. Combine wet and dry ingredients ( batter will be slightly lumpy)
> 7. Pour batter into muffin tins, about halfway
> 8. Bake for 10 minutes, and enjoy!

*Add toppings like peanut butter, coconut flakes, or jam. Yum!
