Celebrating being vegan for 7 years, Paige Parsons Roache has been committed to bringing ECO-VEGANISM to the forefront of every interaction: Environmentally conscious vegan living. After watching the documentary COWSPIRACY, she went vegan on the spot. Her daughter Katelyn, 13 at the time, chose veganism for the animals 6 months earlier. Paige, on the other hand, after being shocked by the environmental impact of eating meat and dairy, chose to go vegan “for the environment.” Soon after, she attended her first pig vigil with LA Animal Save/Animal Save Movement. Once she looked those baby pigs in the eyes, she knew why her daughter had gone vegan. Cooking as a guest chef on LunchBreakLIVE after meeting Jane Velez-Mitchell at VegFestLA, and inspired by Jane’s bold courage, Paige became a Contributor for UnChainedTV. Reporting on all the latest animal rights news. She also became the Senior Booker for UnChainedTV. Pasta Dish Made Super Simple
Most people don’t complain when they are given a super easy recipe with a very delicious result! Grab some Tofurky sausage from the market, pasta sauce, noodles, and some fresh veggies, and get cookin’! This dish is a staple in Paige’s house, as her entire family loves it! In 5 easy steps, this meal can be made in no time at all.
Sometimes we don’t have time to make each meal from scratch, and that is okay! Paige loves the many options of pre-packaged vegan proteins such as the Tofurky sausage she used in this recipe. If you prefer not to use pre-made plant-based meats, feel free to substitute for whatever you would prefer to use, so long as it is vegan!
A Simple Vegan Italian Sausage Pasta Dish
- 1 package Tofurky Italian Style Sausage
- Your favorite pasta noodles
- 1 jar marinara pasta sauce
- Fresh veggies: 1/2 sweet white onion, red pepper, button mushrooms, all organic (I suggest broccoli, spinach, cauliflower, zucchini)
- 2 Tbls of veggie broth
- Plant-based parm or nutritional yeast
- Handful of basil
- Boil water for pasta. Add in and boil until cooked. Chop up veggies. Add 2 Tbls of veggie broth to skillet and warm up on medium/high heat. Start with onions, sauté until translucent. Add other veggies. Cook for 10 mins until soft. Cut up the plant-based sausage into quarter pieces. Add sausage to the veggies. Add pasta sauce until warm. Place pasta in bowl, add veggie sausage mixture. Top with plant-based parm or nooch and garnish with fresh basil.
