Not Your Campbell’s Cream of Tomato Soup (gf, soy-free, fast)
Makes 3 to 4 servings
4 cups water
2 cups yam, cubed
1 cup tomatoes, chopped
1 tablespoon shallot, chopped
1 teaspoon thyme
1/2 teaspoon garlic powder
1/2 cup cashews, soaked 2+ hours then drained
1 (6 ounce) can tomato paste
1 tablespoon nutritional yeast
Sea salt, to taste
Black pepper, to taste
Add water, yams, tomatoes, shallots, thyme, and garlic
powder in a pot and bring to a boil, then simmer until
yams are tender, about 7 minutes. Blend until creamy. Pour half
back into soup pot and puree the remaining with cashews
and tomato paste until creamy. Put blended soup back into soup
pot and simmer over low flame with the nutritional, salt, and pepper.
Taste and season as needed. Heat thoroughly and serve.
