Hot Outside? Refresh with a Watermelon Delight Salad!

Today on #SaturdaySnackdown, Erin Riley-Carrasco, PETA (People for the Ethical Treatment of Animals)’s Sexiest Vegan Over 50, makes a delicious cacophony of fruits & fresh herbs to make an absolutely delicious “Watermelon Delight” salad! Perfect dish to make when you’re entertaining.
This salad is the a great mix of sweet and savory. With temperatures still rising on the West Coast, this is a great way to eat something easy, cool, and refreshing! To begin, Erin uses sliced watermelon and cantaloupe for the sweet flavors. Then she adds avocado, which is packed with nutrients like omega 3 fatty acids. Erin adds beautifully colored tomatoes, fresh mint and basil. Top it off with an optional pinch of sea salt, vinaigrette, and you have a gorgeous refreshing salad to enjoy! Don’t forget to share some with your friends and family!
WATERMELON DELIGHT SALAD
1/2 watermelon, cut into chunks
1/2 cantaloupe, cut into chunks
3 or 4 colorful Heirloom tomatoes, cut into slices
2 avocados, cut into slices
1/4 cup toasted salted sunflower seeds
Small bunch of fresh basil leaves
Small bunch of fresh mint leaves
Herb Vinaigrette dressing
Place all watermelon, cantaloupe, avocado and tomato pieces onto platter
Sprinkle mint leaves, basil leaves, sunflower seeds on top and drizzle with vinaigrette dressing
