Vegan Patty Melt in Minutes!

The quick yummy ingredients that Erin uses to make her vegan patty melt.
Erin Riley-Carrasco PETA (People for the Ethical Treatment of Animals)’s Sexiest Vegan Over 50 makes a Beyond Burger Vegan Patty Melt with caramelized onions. Absolutely delicious!
Beet juice makes these patties red. No blood needed for great flavor!
Erin uses a Beyond Meat burger patty and she uses Chao cheese made by the Field Roast brand. The Beyond Meat burger tastes and appears so much like real meat as the beet juice sizzles out of it, that Erin had to get past her psychological block against meat in order to eat it. Her husband and kids absolutely love these patties! Erin uses Miyokos butter to get her bread nicely toasted. Erin explains that the Chao cheese melts really well and tastes even better than dairy cheese. The Beyond burger has just as much protein as a hamburger made from animal parts.
This looks like the perfect pick-me-up meal any day!
Erin points out that “Veganuary” is here. She urges anyone open to veganism to check out the Veganuary website and try going to plant-based for a month. Who knows it may last longer than that after a person reaps the benefits! The burger patty is done in five minutes and the whole patty melt is done a minute later.  Allen Carrasco, Erin’s husband, hops in for the taste test and says that it is very good and tastes “freakishly” like a meat hamburger. Vegan Patty Melt:

– Beyond Burgers
– Orowheat Deli Rye bread
– Chao Vegan Cheese
– Trader Joe’s Seasoning Salt
– Yellow Onion
– Miyokos Butter
– Olive Oil (for sautéing onions)
– Salt & Pepper to taste

First, caramelize onions in pan using a small amount of olive oil. Set pan aside.

Cook Beyond Burgers using a small pat of Miyokos butter. At the same time, toast rye bread in a separate pan after putting Miyokos butter on both sides. Put Chao cheese on one of the bread slices.

Cook vegan burger(s) thoroughly – takes about 6-8 minutes.

Place warm caramelized onions onto bread slice that has the Chao cheese so it will melt completely. Place burger on other slice then place together to make sandwich. Cook for one minute.

Pair sandwich with dill pickles and sweet potato fries to make a delicious lunch or dinner!
