RECIPE: Emek’s Vegan Banana Spelt Muffins with Melted Chocolate
(note: all ingredients are organic)
DRY INGREDIENTS
- 2 cups spelt flour, sifted (One Degree Organics)
- 1/2 cup coconut or date sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 2 T cacao powder
- pinch of pink salt or sea salt
WET INGREDIENTS
- 3 T shredded coconut
- 2 T grape seed oil
- 1/2 cup distilled water
- 2 ripe bananas
- 1/2 apple, cored and chopped
TOPPING
- Place 5 oz dark chocolate chunks (vegan) in a tempered glass bowl placed
- Boil water in a sauce pan and turn off the heat.
- Place the bowl with the chocolate on top of a pot of hot water and let it melt (about 5 minutes)
DIRECTIONS
- Preheat oven 380 F for 10 mins
- Gently fold the wet ingredients into the dry ingredients
- Place muffin liners into a baking pan
- Spoon muffin batter into the muffin liners
- Bake at 380 F for 15-20 min
- Drizzle melted chocolate on top of each muffin, as evenly as possible with a spoon.
- Let it rest for 5-10 mins & enjoy 🙂
