Super Simple Strawberry Sorbet at Home!

Erin Riley-Carrasco, PETA (People for the Ethical Treatment of Animals)’s Sexiest Vegan Over 50 and her friend Janie, an acupuncturist at #Acupuncture7 in #Encinitas, CA., share a simple and nutritious recipe for a strawberry sorbet smoothie. Super easy tp make and it has plenty of vitamins and fiber!
This recipe is packed with plant-based nutrients! From banana to avocado and citrus, this is no ordinary sorbet! Janie points out that the sugars in fruits digest much easier and they don’t cause those sugar spikes and crashes. Erin recommends getting a Vitamix if you don’t already have one. She says it can’t be beat for smooth blending. You can also substitute the maple syrup for soaked dates if you prefer them.
If the sorbet blends too liquified you can drink it, or pop it in the freezer for a bit until it solidifies a bit. Erin says it’s absolutely delicious! Try making your own delicious healthy vegan strawberry sorbet at home with the recipe below!

Vegan Strawberry Sorbet
> 1 lb organic strawberries
1 frozen banana
> 2 avocados
> 1-2 wedges lemon
> 1/2 cup maple syrup OR 7 dates covered in water and soaked overnight
> 1 tsp organic vanilla extract
Directions: Empty strawberries, frozen banana into a high speed blender or preferably a Vitamix. Add avocado, lemon, maple syrup (or dates), and vanilla. Blend on high until smooth. Empty into a container and freeze until solid.
