Appetizing Almond Crusted Tofu Nuggets!

Today on #SaturdaySnackdown, Erin Riley-Carrasco, PETA (People for the Ethical Treatment of Animals)’s Sexiest Vegan Over 50 shares a delicious Almond Crusted Tofu Nugget Appetizer, perfect for Holiday parties.
Erin explains that many of her friends in their fifties like her, are getting sick by eating the all American diet with animal products. She wholeheartedly believes that what you put into your body is what you are going to get out of it. She explains that the Chinese eat a high vegetable diet with soy, and they barely have breast cancer in that country. Erin recommends reading The China Study, by T. Colin Campbell and Thomas M. Campbell II for more information about the benefits of this dietary lifestyle.Â
Erin whips up the marinade after slicing the tofu triangles, and she puts the triangles in the mix. Flip them a couple times and shake it up to get them fully immersed in the marinade. Erin uses almond meal as an alternative to corn meal. She adds a touch of nutritional yeast instead of parmesan cheese. The best part is that Erin bakes the nuggets instead of frying them in oil, which is much healthier. Once you get your tofu marinated and crusted, bake them for 25 minutes. You can wrap them in lettuce, with sliced avocado, and add a sauce to make a wonderful appetizer. No need for chicken or a any other animal products to enjoy these protein-packed nuggets at home.
