NEW YORK-BASED ANIMAL ADVOCATE AND GREAT COOK!
Donny Moss is a NYC-based animal rights activist who runs local campaigns and produces videos for TheirTurn.net. In 2008, Moss made the award-winning film BLINDERS that documents NYC’s controversial horse-drawn carriage trade. From 2009 – 2013, he led a successful campaign to end the political career of an elected official running for Mayor who blocked animal protection legislation for eight years. In May 2015, he launched a grassroots campaign to compel the NY Blood Center to pay for the care of 66 chimpanzees who the organization abandoned with no food or water on islands in Liberia. That campaign ended in May 2017, when the organization made a $6 million contribution to pay for the lifelong care of the chimps.
Donny is one of my all-time favorite humans and activists. He tirelessly fights for animal rights and is the type of person who will never stop until justice is served. I admire his passion and ambition as he fights the good fight…trying to make this world a better place for people and animals. But his talents don’t stop on the AR frontlines. He is an incredible cook, always whipping up creative and tasty vegan recipes for friends and family (or just himself). We appreciate it when he joins us on #LunchBreakLIVE and shows us his kitchen magic and comedic charm. Let’s dive right into the dish he made for us today.
A VEGAN RECIPE THAT IS A MUST-TRY!
I will for sure be trying this vegan recipe at home soon. I eat tofu almost daily, but all I do is throw it in an air fryer and hope for the best. Ha ha. This recipe seems to be easy enough for me to handle, and delicious enough for me to truly enjoy. I am glad I have a new tofu recipe for a change!
- 1 package of extra-firm tofu cut into bite-sized cubes and wrapped in towels to remove moisture
- 1/2 onion finely chopped
- 4 garlic cloves minced
- 1 lemon juiced
- 4 TB capers
- 1 cup of vegetable stock
- 3 tablespoons dairy-free butter
- 2 tablespoons of minced or finely chopped fresh parsley
- Heat oil, add onions and sauté for a few minutes; add tofu and sauté until slightly golden on a few sides; add garlic and sauté for a minute, add the stock and cook until its fully absorbed, add butter, lemon, parsley and season to taste.
