Cooking Contest Winner Launches Vegan Lox Brand
Nicole Derseweh, the contest winner of the 100% vegan cooking competition PEELED, is launching a Vegan Lox Brand.
Los Angeles, January 27, 2023 — When you’re the contest winner of a TV show, it’s a great opportunity to use the momentum to start your dream project. After winning the fully vegan cooking competition PEELED in 2022, celebrity chef Nicole Derseweh has lots of projects cooking at the same time. And, they all look like winners!
Derseweh has been running The Martha Project, which brings quality, plant-based meals and human connection to those without shelter. She has also co-written a cookbook filled with delicious, plant-based, ketogenic recipes. And, now, she’s launching EAT LOVE LOX, a plant-based and eco-friendly alternative to traditional lox. UnchainedTV’s Jane Velez-Mitchell had a conversation with Nicole Derseweh to see how she does it all. You can watch it here:
EAT LOVE LOX Seeks Investors
Nicole Derseweh is a world-class vegan chef with a culinary background from Le Cordon Bleu. There are many talented chefs in her family. You can currently experience her creations at high-end events and exclusive pop-up dinners in and around the Los Angeles area.
Derseweh’s new project is a new food brand. It’s a vegan version of lox, a salmon product many people love. Her mission is to allow people to enjoy healthy, sustainable, cruelty-free EAT LOVE LOX in any dish, from bagels to sushi rolls, pizza, or sandwiches. She says she’s found a way to make it taste virtually identical. And, perhaps most impressive, she touts that her vegan lox provides more omegas per serving than its fish counterpart. Derseweh, who is seeking investors, explains why she chose this product:
“Seafood was one of the things that I missed the most when I came over to the plant-based lifestyle. And I also noticed there is such a huge hole in the market when it comes to these seafood alternatives.”

Nicole Derseweh’s Message to the World

I don’t believe in lack or missing out. I love showing that we still indulge in everything that we grew up eating — all the treats and goodies that we want — but we can also do it without harming the planet.”

Helping Others, Vegan Style
In 2019, Derseweh also started the Martha Project, a non-profit organization that feeds plant-based meals in eco-friendly packaging to the houseless community of Los Angeles. She named it after her grandmother Martha Anne, who was always helping out other people in her neighborhood. She explains what’s special about this project:
“The way that we handle the handout is what really differentiates us and makes us special. When the volunteers load out, we go directly into the streets, directly to the encampments, to the parks, and hand deliver the meals. We go there because many of the recipients don’t have the resources to figure out where food is handed out, or they’re suffering from mobility issues.”
She has also found a way to help those who want to follow a keto diet (low in carbohydrates) but do not want to consume animal products. Together with Whitney Larson, she co-authored a book titled The Vegan Ketogenic Diet Cookbook. This is what she said about it:
“You can be completely ketogenic and do it entirely with plants. And, not only is that better for the animals, but it’s also a million times healthier for you and for your body to do ketogenic with vegetables. This is incredible at helping the body recover.”
