I am always impressed with Tonia’s cooking. She has some serious kitchen skills, but her talents go above and beyond just the kitchen! Tonia is a hairstylist and indie filmmaker from Michigan who has been doing vegan activism since 2018. Let’s take a look at how these incredible breakfast cookies turned out. Hint hint…they look delicious! What would you put in your cookies? I would definitely have chocolate and nuts! Maybe some dried cranberries for fall! What about apples? could I put apples in them? Oh, and cinnamon? Yeah, that sounds good.

I am providing the recipe for you to give these super easy and versatile breakfast cookies a try for yourself. Why not, we have plenty of time at home these days to be cooking and baking, so let’s do it. I love this recipe because you truly can make them your own, with whatever ingredients you like. Keep it super healthy if you prefer, or add some sweets for more of a dessert treat.
Super Easy Breakfast Cookies
Ingredients
- 3 previously thawed formerly frozen bananas (or 3 nice and ripe bananas)
- 1 1/2 C Old Fashioned Oats
- Add any of the following in the amounts you like:
- blueberries and brown sugar, Vegan chocolate morsels, Nuts, dried fruit.
Instructions
- Mix and spoon onto baking sheet.
- Cook at 350 for 12-15 minutes.
- Let cool for several minutes to firm up.
- These freeze very well.
