Erin Riley-Carrasco PETA (People for the Ethical Treatment of Animals)’s Sexiest Vegan Over 50 makes her favorite Vegan Tunafish Recipe! No need to kill fish to enjoy this delicious taste. This Tunafish Salad not only makes a great sandwich but is tasty as a dip with crackers or veggies.
The sun is out, its springtime, then summer and this vegan Tunafish recipe is the perfect meal for both! This protein-packed tuna salad is great to use as a dip with crackers or cut veggies, makes an incredible tuna melt and perfect vegan “tuna” sandwich. The sunflower seeds gives it added texture and the tahini dressing makes for a smooth consistency. Make a double batch because we promise you, everyone in your home will love and it never lasts long in the fridge! ENJOY!
Vegan Tuna Fish Sandwich Recipe:
2 cans Garbanzo beans (or Chickpeas) mashed
6 tbs Tahini
2 tsp Dijon mustard
2 tbs maple syrup
1/2 cup diced celery
1/4 cup sweet pickles or relish
2 tsp capers (mashed)
2 tbs unsalted sunflower seeds
1/4 cup diced red onion
1/2 lemon squeezed
salt and pepper to taste
*Optional: Add 2 tbs “Just Mayo” vegan mayonnaise to make the consistency of vegan tunafish creamier
Used “Dave’s Killer Bread” 21 Grains and seeds as bread for the sandwich, added a small amount of Just Mayo on
each slice added 2 large slices of tomato and iceberg lettuce.
