Fluffy Mickey Mouse Vegan Pancakes!

Lisa, aka Happiest Vegan on Earth, is an unapologetic Disney fan and lives within walking distance to Disneyland. She is originally is from Apple Valley, CA, but she went vegan while living on a farm in Tennessee with chickens and goats during graduate school about 4 years ago. After moving back to southern California, she started a blog and Instagram account where she documents the many vegan options at Disneyland. This means that she ends up being in Disneyland at least once, usually more like twice a week, to try out and report on the new options.

The Recipe

 

Pillowy Pancakes:
Dry ingredients:
1 1/2 cups all-purpose flour
2 Tbsp sugar
1 Tbst baking powder
1/2 tsp salt
Wet ingredients:
1 3/4 cups soymilk
3 Tbsp light oil (canola/vegetable etc)
1 Tbsp lemon juice (1 lemon)
1/2 tsp vanilla extract
Instructions:
Whisk together dry ingredients in a large bowl. In a medium bowl, whisk together wet ingredients. Pour the wet ingredients into the dry an dmix until just combined. Some lumps are okay, just don’t overmix or it will affect the fluffiness.
Lightly oil a nonstick frying pan. Over medium heat, use a 1/4 cup measure to scoop the batter into the pan. When large bubbles start showing on the surface of the pancakes and they’re golden brown on the bottom, flip them and cook for an additional couple of minute son the opposite side. Serve with toppings of choice.
