Erin Riley-Carrasco, PETA (People for the Ethical Treatment of Animals)’s Sexiest Vegan Over 50 and her beautiful niece Gina share this family favorite, quick and easy recipe that is SO tasty! Perfect when you need to bring a cruelty-free hors d’oeuvre/appetizer to a family gathering or holiday party. Enjoy!
This delicious Lentil Bruschetta Dip with Vegan Feta Cheese is a definite go-to recipe for this hectic time of year and is perfect for holiday gatherings or to whip up in your home for a protein-packed, healthy meal. It has been a favorite at our family holiday parties for years and is always the first to go. It only takes 20 minutes to make the Lentil dip, including the fresh bruschetta w/ organic basil, garlic, balsamic vinaigrette, olive oil, and organic Roma tomatoes. Pair with your favorite Pita, Tortilla or Corn Chips. Quick, easy, healthy, tasty and cruelty-free. My favorite kind of appetizer! Enjoy!
Mix the steamed lentils, Roma tomatoes, vegan feta cheese, fresh basil, fresh garlic, olive oil, Balsamic Vinegar and salt and pepper to taste in a large bowl. Taste a spoonful and add a little more Balsamic Vinegar if desired. Put in a serving bowl on a platter and pour chips around the bowl.
