Let’s Have Lunch In Spain! Come Join Me!

It’s GAZPACHO time! Cool, flavorful, and SUPER SUMMERY! Join Your Vegan Friend Tonia for an incredible virtual trip to Spain with a refreshing meal that is totally vegan and 100% delicious!  This is an easy plant-based recipe perfect for the summer heat, sure to cool your temperature while spicing up your cooking experience.

 

 

Tonia is a hairstylist and indie filmmaker from Michigan who has been doing vegan activism since 2018. She is grateful to represent the Midwest on the JaneUnchained News Network. And we love having her!  Tonia has a YouTube channel called Your Vegan Friend Tonia that you should definitely check out.  It is fresh and fun and filled with lots of delicious recipes, and other great videos about veganism and the vegan lifestyle.  From recipes to interviews, and visits to animal sanctuaries, you can find it all on Tonia’s YouTube channel.  

I love watching Tonia in the kitchen.  She is always full of surprises, tips, and tricks, and lots of recommendations for delicious vegan alternatives.  She creates the most amazing global recipes, from all over the world.  Her meals never lack in flavor and are always cooked with love.

So what is Gazpacho?  

A classic of Spanish and Portuguese cuisine, Gazpacho is a soup that is generally served cold which is why it is perfect for the summer months.  It is the perfect refreshing and cool meal.  See below for the recipe and ingredients!  I hope you try this one at home and let us know how you liked it!

Ingredients
  

  • 2 Large cans of Cento San Marzano tomatoes
  • 2 English cucumbers
  • 1 each-red orange, and yellow pepper
  • 1 small red onion
  • bunch of minced cilantro
  • 1/2 c. Wish-Bone Salad Dressings Italian dressing
  • 1/4 c. red wine vinegar
  • 1/2 EVOO I didn't use this and didn't miss it at all!
  • 1 T garlic powder
  • 1 t iodized salt

Instructions
 

  • It's best after sitting for several hours and good for about 3 days. Top with Avocado and Tofutti vegan sour cream if you'd like!
  • Blend the tomatoes, dressing, garlic, and salt.
  • Chop or blend veggies and add!
  • Easy!
