This is a salad packed with plant-based nutrition made by guest chef, hockey player, and performance coach Rick Scott! He is a vegan powerhouse and knows how to keep veganism healthy, tasty, and simple. Let’s take a look at how he literally tossed this simple, yet beautiful, salad together.
Creative And Compassionate Vegan
A creative and compassionate music, sports, and entertainment public relations executive, Rick began representing vegan/animal nonprofit organizations to purposely align his work with his core values. Plant-based for 32 years, Rick is a hockey player and former bike racer based in Los Angeles who trains and competes daily with athletes who struggle to keep up with the energetic vegan powerhouse. Whether on the ice, on the bike, or in the gym, his training partners have always been elites, pros, and Olympians because his infectious enthusiasm, heart, and hustle enable him to push them to the limit. His passionate pursuit of greatness is plant-powered and age does not define him.
Rick is a peak performance coach and among the athletes he serves is the UCLA ice hockey club. A captivating and heartfelt storyteller, he has penned columns for the Switch4Good, Jane Unchained, and Vegan Magazine websites that present facts, debunk myths, and confront issues common to vegan athletes and anyone on a plant-based diet. Rick earned a certificate in plant-based nutrition from T. Colin Campbell’s eCornell University program.
Vegan And Still A Protein-Packed Salad
You don’t get enough protein as a vegan. LIES! This is such a false statement it’s not even funny. Plants have plenty of protein to fuel us vegans. Seriously, when was the last time you heard of someone having a “protein deficiency?” It’s just not really a common thing. Vegan meats, tofu, nuts, seeds, legumes, grains, etc., are all packed with healthy proteins and fuel the body with additional nutrients. Rick’s protein-packed salad is a perfect example of how easy it is to get protein on a plant-based diet. His salad has seitan, pumpkin seeds, and hemp seeds which all contain a nice amount of protein. Seitan gives that “meaty” texture some people like. He also adds tomatoes, blueberries, carrots, and nutritional yeast, adding additional vitamins, minerals, and nutrients to this power salad.
Protein Powered Salad
- spinach handful
- Shredded carrots Handful
- Cherry tomatoes Handful
- Blueberries handful
- Seitan handful
- 1 Tbs pumpkin seeds
- 2 Tbs hemp seeds
- Nutritional yeast sprinkle liberally
- Oil free vinaigrette dressing
